Chicken Schnitzel


I tried this healty chicken schnitel and it was yummy.  The non traditional chicken Schnitzel  has a crunchy crust from the almond meal, parmesan cheese and herbs.


1 cup almond meal

1⁄3 cup chopped herbs (coriander and thyme)

2 tbsp. finely grated parmesan

1 zest of Lemon

2 eggs lightly beaten

1 tbsp. milk

1 crushed garlic

Salt and pepper

4-6 pieces chicken thighs

1 tbsp. oil

Lemon wedges to serve



Preheat chargrill pan with the olive oil

Have two shallow bowls on the table.  The first shallow bowl add the almond meal, lemon zest, herbs, salt, pepper and parmesan.

The second shallow bowl add the egg, milk  and garlic.

Dip the chicken in the egg mixture and them coat with the almond mixture.

Add the chicken on the chargrill pan and cook until chicken is brown and cooked through.



This dish serves 4.
