A easy snack to make during the weekend for the week. The apricot balls have a tangy taste from the dried apricots, crunch from the roasted nuts and sesame seeds.
100g unsalted cashew nuts
20g sesame seeds
80g dried apricots
1 tbsp. almond meal
4cm piece if ginger
½ tsp mixed spice
2 tbsp. honey
Roast the cashew nuts and sesame seeds in a dry pan on a medium heat. Heat until lightly brown. Set aside to cool.
In the food processor, add the apricots, almond meal.. ginger, spice, honey, cashew nuts and sesame seeds. Process until the mixture is combined.
Roll them into balls. Make 8-10 balls.
