This is an awesome snack to have during your mid morning break or as an afternoon snack. The dates are soaked in water to give the sticky feel and blended into nuts and almond meal.
½ cup dates
¼ cup mixed nuts (almonds, pistachio, hazelnut, cashew, macadamia, brail nuts any nuts or a mixture of your favourite nuts)
¼ cup almond meal
¼ cup desiccated coconut for coating
¼ tsp. salt
Add dates in a bowl and cover it with hot water. Soak for 15 minutes. After 15 minutes drain the water and set aside.
In a processor add the nuts and process until it is partially fine. Add the dates, almond meal and salt. Process until it is combined. Add eextra almond meal if mixture too sticky.
Roll into 10-12 balls and coat in coconut.
