Pina Colada Bites

The moment I saw this recipe I had to try it and I was happy with the results. Love the tangy taste from the pineapple, the sweetness from the dates and crunchy coconut toping.  It has  four ingredients, the two main ingredients of a Pina colada, pineapple and coconut.  The other two ingredients which are not found in a Pina Colada are dates and cashew nuts.

 

Ingredients

1/2 cup unsalted cashew nuts

1/3 cup dates, pits removed

1/3 cup desiccated coconut

1/3 cup canned pineapples drained

Pinch of salt

Extra desiccated  coconut for coating

 

Method

Preheat oven to 180ºC

Line baking tray with non stick paper

In a blender add cashew nuts, dates. coconut and a pinch of salt.  Process until it resembles breadcrumbs.

Add pineapples and process until smooth and sticky and you can form a dough.

Add the extra desiccated  coconut on a plate.  Make teaspoon size disc and coat in the coconut.  Place on the baking tray.

Bake for 5-10 minutes, or until it is golden brown.

 

Note

When baking put an eye on the coconut so it doesn’t burn
