Mango Chia Pudding

I learnt something new, chia and almond milk has to be whisked after every 15 minutes when you let it set for two hours. The whisking helps to aerate the mixture, giving it a more creamy texture. I loved the creamy texture of the whisked chia pudding. I layered the pudding with mango, chia and muesli. When you layer it you get a crunchy texture from the muesli, sweetness from the mango and creaminess from the pudding.

Ingredients

200 g natural almond milk

25 g Chia seeds

2g vanilla essence

45 g toasted honey museli

140 g frozen mango (you can use less if you want.)

Method

Whisk almond milk and chia seeds together. Let it set for two hours, during the two hours make sure you whisk it after every 15 minutes.

Thaw the frozen mango. Once it is soft blend it to a smooth consistency.

Get a long glass and start layering. Place the mango at the bottom, muesli, chia, repeat the process for the second layer and third.

Use other fruits such as blueberry. strawberry.

Use nuts such as slivered almonds instead of muesli.

Tropical Fruit Sorbet

Sorbet is light and refreshing  and can be made a day in advance.  It is also a great summer dessert.  Another thing you do not need to make the sorbet from scratch.  I added fruits to the sorbet, roosted shredded coconut and passion fruit.

Ingredients

1 litre mixed berry sorbet

1 litre coconut sorbet

1 litre mango sorbet

For decoration to need

1/2 a mango sliced

140g canned passion fruit 

handful of roasted shredded coconut

handful of raspberry and strawberry

To make the sorbet

Line a baking dish with cling wrap.  This makes the sorbet easier to remove.

Remove the mixed berry sorbet for ten minutes to melt.  Once melted pour in the baking tin.  Put in the freezer for two hours to set. 

After two hours, remove the coconut sorbet to melt, and after ten minutes pour on the frozen strawberry sorbet and let it set for four hours in the freezer

After four hours remove the mango sorbet and let it melt for ten minutes and pour over the frozen coconut and mixed berry sorbet.  Place sorbet in the freezer and let it set.

When ready to serve, turn sorbet upside down on a serving plates and remove cling wrap.  Drizzle the passion fruit, sliced mangos. coconut and berries over the sorbet.  Slice and enjoy.  

Tropical Fruit Platter



After a heavy lunch on Christmas day I tend to have something light.  A fruit platter is easy to prepare and all you need is two large plates or a platter board.  Slice your favourite fruits or summer fruits. 

On my fruit platter I added summer fruits.  I started by placing the red and green  grapes on the middle of the plates.  I sliced mango, sweet melon, kiwi, grapefruit oranges and strawberries. I made some fruit rolls as well.  

To make the fruit rolls.  Use rice paper and sliced fruits.

You can be creative and add any two or three fruits on the rice paper and roll them.

Follow the rice paper instructions.  


Apple Pikelets and Poached Apples

I usually have  Banana Pikelets on Sundays so this Sunday I decided to swap the bananas for apples and made apple pikelets.  At first I was worried but it turned out well and tasted delicious.  I  used the  Apple breakfast crumble  recipe to make the poached apple.  I omitted the chia seeds in this ingredients.

 

Ingredients

To Make the poached apple

4 red apples chopped

2½ cups water

½ tsp ground cinnamon

(Be careful with serving size, read note)

 

To Make the Apple Pikelets

1 cup self raising flour

½ tsp baking powder

1 red apple grated

1 tbsp. Honey

3/4 cup milk

1 egg

Honey or  maple syrup to drizzle.

 

Method

To make the poached apple

Add the water, cinnamon and chopped apples in a sauce pan over medium heat. Cover with a lid and bring to boil. Once it boils reduce and simmer for 2 minutes.

After two minutes put the heat off. (Don’t spill the water, the apple will continue browning if it’s still pale or white.)

Set aside.

 

To make the apple pikelets

Place the flour and baking powder in one bowl.

In another bowl, whisk the grated apple, eggs, milk and honey.

Add the wet ingredients to the flour and continue to whisk until combines.

Put the mixture aside to set for 5-10 minutes.

Lightly grease a non tick pan on a medium low heat and use 1/4 cup to pour batter. Cook batter for two minute on each side or until bubbles form.

Once all pikelets are made, add the yogurt, poached apples and maple syrup or honey.

Apple Pikelets serves 2

Poached apple serves 6. You cab reduce the ingredients by half or you can store the apples in a container and use it for breakfast the next day.

Apple breakfast crumble

I tried a new breakfast recipe today.  This dish is healthy, simple  to make and is delicious.  The apple is poached and soaked in chia seeds.  The crumble is made from almond meals, crushed almonds, cashew nuts and desiccated coconut.

Ingredients

To Make the apple

4 red apples chopped

2½ cups water

½ cup chia seeds

½ tsp ground cinnamon

 

To Make the Crumble

1 cup almond meal

1 cup cashew nut

1 cup almond flakes

¼ cup desiccated coconut

½ tsp ground cinnamon

pinch of nutmeg

¼ cup olive oil

 

Method

To make the apple.

Add the water and chopped apples in a sauce pan over medium heat.  Cover with a lid and bring to boil.  Once it boils reduce and simmer for 2 minutes.

After two minutes put the heat off and add the chia seeds.  (Don’t spill the water, the chia seeds will absorb the water and the apple will continue browning if it’s still pale or white.)  Set aside.

To make the crumble

Preheat oven to 180ºC.

Line baking tray with non stick baking paper.

In a bowl add all the ingredients for the crumble and add the olive oil.  Mix until combined.  Pour mixture on the baking paper, making sure it is all flat.

Bake for 5-10 minutes or until golden brown.  Keep checking the crumble so that  it doesn’t burn.

Add 1 cup of the apple and 1 tbsp. of the crumble.  Enjoy

I have tried several banana pancake and pikelets recipes and this is my favourite one.

Ingredients

1 ripe banana mashed

1 tbsp. Honey

3/4 cup milk

1 egg

Yogurt and berries to serve and maple syrup to drizzle.

Place the flour and baking powder in one bowl.  In another bowl, whisk the banana, eggs, milk and honey.  Add the wet ingredients to the flour and continue to whisk until combines.  Put the mixture aside to set for 5-10 minutes.

Once all pikelets are made, add the yogurt, berries and maple syrup.

Tropical Fruit Salad

There is nothing more refreshing than a bowl of fruit salad on a summer’s day morning.   I combined mango, banana, kiwi fruit and grapes to make my tropical fruit salad and added yogurt and a drizzle of passion fruit.

Ingredients

1 banana

½ a mango

Handful of grapes fruits

1 kiwi Fruit

2 tablespoons yogurt

1 table spoon passion fruit (feel free to add more)

Method

Chop all the fruits and add into the bowl. Add yogurt and drizzle with passion fruit.

 

Note

This dish serves 1

Feel free to add pineapple instead of kiwi fruit, or papaya.

Apples one of my favourite fruits.  This breakfast dish keeps you full through the morning. The sweetness from the apple, the crunch from the walnuts and a dash of cinnamon make this delicious.

Ingredients

¼ cup couscous

1 red apple diced

2 tablespoons natural yogurt

20g walnuts

Dash of cinnamon

Method

Cook couscous according to packet instructions.

When couscous is ready. add cinnamon, diced apple, walnuts and yogurt.
