Pumpkin Mash and Steak

I never realised that making mash from grilled pmpkin would taste delicious. Instead of boiling pumpkin to make your mash, grill the pumpkin for a tastier flavour.  I seasoned my steak with Moroccan spices and roasted baby tomatoes and added spinach.

Ingredients  

2 cups chopped pumpkin

2 scotch beef fillets

1 tbsp olive oil

Olive oil spray

10 baby tomatoes

Handful of spinach

1 tsp Moroccan spices

Salt and pepper

 

Method

Preheat the oven to 200°C.

Layer a sheet aluminum foil on a baking tray, place pumpkins on the foil and season with salt and pepper.  Fold the foil to make a parcel and place in the oven. Bake for 25 minutes.

Ten minutes into your pumpkin cooking time. add the tomatoes on the baking tray and cook for a further 15 minutes.

Once pumpkin is ready add ½ a tsp of olive oil and mash the pumpkin.

Season the steak with  ½ a tsp of oil, salt, pepper and Moroccan spices.  Add a grill pan on a high heat.  Once pan is hot, spray with olive oil.

Add the steak on the grill and cook for 3-4 minutes or to your liking.

On a plate, place spinach, mash and steak with the tomatoes.

 

Notes

This dish serves 2

If you are worried about the steak being raw or burning reduce the heat to medium high.

Lamb Korma

This is one of my favourite lamb curries. It is easy to make and yummy.  The lamb curry is cocked in onions, a bend of spices and yogurt.  This dish tastes better one day later and a good idea to make during the weekend and freeze it for the week.

Method

500g lamb chops

1 onion chopped for the marinade

½ an onion for frying

1 tablespoon grated ginger

3 cloves of crushed garlic

1 tablespoon coriander

1 tablespoon cumin

1 teaspoon cardamom

½ tsp salt

Pinch of cayenne pepper

2 tablespoon olive oil

2 tablespoon tomato paste

1/2 cup plain yogurt

 

Method

Add 1 onions, ginger, garlic and the spices in a food process and blend until it becomes a paste.

Add the spices to the lamb chops and set aside for 1 hour.

In a hot pan add the remaing onion, cook until it’s soft.  Add the lamb chops on a medium low heat, cook lamb for 8-10 minutes or until lamb is brown and the liquid has absorbed.

Add the tomato paste and two tablespoons of yogurt, stir until combined,  Simmer uncovered until all the liquid has absorbed.

Add two tablespoon of yogurt, stir until mixture is dried than add another two tablespoons and repeat.

Once you added all the yogurt, cover and simmer pan on a low hear for thirty minutes or until is tender.

 

Note

This dish serves -4 people.

Id adding spinach, put the spinach towards the end.

Add the chick peas when you start to simmer.

Cottage Pie

A twist to the traditional cottage pie, this recipe uses sweet potato instead of potatoes. Sweet potatoes are a good source of iron, magnesium,  potassium and vitamin B6, C and D.  I loved this alternative.

Ingredients

500g mince meat

1 tbsp. olive oil

1 sweet potato

400g Bolognese  sauce

 

Method

Preheat oven to 220ºC.

Chop sweet potatoes and put in a pan of cold water.  Boil for 15-20 minutes or until you can mash potato with the back of a spoon.  Once cooled mash potato.

Remove another pan, add olive oil, when the oil is heated add meat and cook for a few minutes or until brown.

Add sauce and bring to the boil.  Cover and simmer for 20 minutes or until sauce has reduced.

Put meat in ramekins dish and top with sweet potato.  Bake for 20 minutes or top is crusty.

 

 

 

 

Spicy Grilled Steak

Nothing beats a good tasty grilled steak.  The steak is marinated in barbeque sauce, Worchester,  honey, chill and garlic.

 

Ingredients

880g Steak Fillets

2 tbsp. Barbeque sauce

1 tbsp.  Worchester sauce

1 tbsp. Honey

1 Red chill chopped

1 Garlic crushed

 

Method

In a bowl add all the ingredients and mix with the steak.  Let it marinate for 30 minutes or longer.

Place chargrill pan on a medium heat.  Once it’s heated place steak on the pan and cook until it is brown or to your liking.

You can serve this dish with salad or coucous or cauliflower rice.

Pasta with Pesto and Meatballs

For  a quick pasta recipe combine pasta with the delicious Nutty Pesto, grilled tomatoes, thyme mushrooms and meatballs mixed with herbs and parmesan cheese.

Ingredients

For the Pasta

Nutty Pesto

120 g Fettuccini Pasta

200 g mushrooms

200 g cherry tomatoes

1 tsp. thyme

 

For the Meatball

500g beef mince

2 tbsp. Almond meal

I tbsp. Parmesan cheese

1 tsp. Italian herbs

1  tsp. oregano

1 tsp. basil

1 tsp. thyme

1 egg

 

Method

For the pasta

Boil fettucine according to packet instructions,

Preheat oven to 180ºC  fan force oven

Place baking pager on tray.

Place tomatoes on the tray and sprinkle olive oil.  Bake for 15 minutes or until bruised.

Add a tablespoon of olive oil in a pan and cook mushroom until it is brown.

Once mushroom is done sprinkle thyme and set aside.

In the  same pan add a tablespoon of olive oil and put the pesto and cook gently in the oil for a few minutes.  Make sure Pesto doesn’t burn.

Add the mushroom, cherry tomatoes and pasta in the pesto.

 

For the meatballs

Preheat fan force oven to 200ºC.

Line tray with baking paper.

Add all the ingredients in the mince meat and mix with hands, until well combined.

Roll into balls and place on the trays.  (Make 12-16 balls).

Bake for 25 minutes or to your liking.

Add the meatballs to your pasta.

Grilled Beef and Mushroom with Broccoli Mash

I found this broccoli mash to be a good alternative to mash potato. I steamed and  mashed the broccoli, added lemon and parmesan which gave it a tangy taste. Serve this broccoli mash with grilled beef and thyme mushroom.

Ingredients

4 cloves garlic crushed
1/3 cup basil leaves finely chopped
4×180 g fillets
400g sliced mushrooms
2 tbsp. thyme
Babyy spinach leaves

For Broccoli Mash
2 broccoli chopped
1/3 cup milk
1 tbsp. olive oil
1 tbsp. lemon juice
1 tbsp. grated parmesan
Salt and pepper to taste


Method

For the Broccoli Mash
Steam or boil broccoli for 5 minutes or until it’s cooked. Let it cool down once you remove it from the heat.
Place the broccoli in the food processor, blend until it’s mashie. Add the other ingredients and combine.

For the Meat.
Make a basil oil by combining the basil, one garlic and 1/4 cup of olive oil. Set aside.
Heat a char grilled pan, once it’s heated place the meat on the fire and cook it to your liking. Once the meat is ready let it cool.
Heat oil in a large frying pan, cook the remaining garlic in the hot pan for 30th seconds.
Add mushroom and cook until it’s golden brown. Add thyme and stir,
Add the basil oil on the meat with the mushrooms and spinach, Enjoy it with the Broccoli Mash.

Note
This dish serves four. Be careful with the quantity.

Pumpkin is a great vegetable,  it’s packed with nutrients and a good source of fibre. Try this roasted pumpkin which is coated in paprika and grilled beef for a delicious dinner.

Ingredient
150g beef fillet or steak
200g pumpkin
1 tsp paprika
oil
Bunch of spinach or rocket leaves

Method
Preheat oven to 180ºC for fan force oven
Chop pumpkins and add paprika and oil
Place pumpkin on a baking tray
Bake for 15-30 minutes
For the beef add your favourite spices like paprika, cumin and coriander.
Place beef on a char grilled pan for 3-4 minutes on both sides
Add spinach or rocket to serve.

Beef and Beetroot Sandwich

A quick lunch idea, spread mustard on a multigrain bread top with slice roast beef,  topped with beetroot and rocket.

Ingredients
2-4 Slices of roast beef
4-8 slices of beetroots
2 slices of bread
A handful of rocket leaves
Mustard

Method

Spread mustard on bread
Add roast beef
Add beetroot
Add Rocket

Serves 1

Feel free to use your favourite spread instead of mustard such as horseradish.
