There is nothing more refreshing than a bowl of fruit salad on a summer’s day morning. I combined mango, banana, kiwi fruit and grapes to make my tropical fruit salad and added yogurt and a drizzle of passion fruit.
Ingredients
1 banana
½ a mango
Handful of grapes fruits
1 kiwi Fruit
2 tablespoons yogurt
1 table spoon passion fruit (feel free to add more)
Method
Chop all the fruits and add into the bowl. Add yogurt and drizzle with passion fruit.
Note
This dish serves 1
Feel free to add pineapple instead of kiwi fruit, or papaya.

Apples one of my favourite fruits. This breakfast dish keeps you full through the morning. The sweetness from the apple, the crunch from the walnuts and a dash of cinnamon make this delicious.
Ingredients
¼ cup couscous
1 red apple diced
2 tablespoons natural yogurt
20g walnuts
Dash of cinnamon
Method
Cook couscous according to packet instructions.
When couscous is ready. add cinnamon, diced apple, walnuts and yogurt.

Nothing is warmer on a cold winters day than a bowl of porridge with your favourite berries, nuts, chia seed and topped with natural yogurt.
Ingredients
1/3 cup rolled oats
1 cup milk of your choice
1/2 cup berries of your choice
1 tbsp. chai seed
handful of walnuts
1 tbsp. yogurt.
honey to drizzle (optional)
Method
Add the oats to the milk and bring to the boil. Once it has boiled simmer for 10 minutes or until grains is soft.
Pour oats in your bowl and top with remaing ingredients.

Panna Cotta with Mixed Berries
Yes you can have pudding for breakfast! This delicious Chia Pudding has the creaminess from soaked Chia seeds, the sweetness from the fruits and the crunchiness from the nuts. A perfect cold summer breakfast.
Ingredients
¼ cup chai seeds
1 cup milk
¼ tsp vanilla extract
½ tsp honey
Pinch of ground cinnamon
Method
Soak the chia seeds overnight in the milk, vanilla extract amd honey.
In the morning add your favourite toppings. I add raspberry, blueberry and cashewnuts.
Note
Instead of milk use water or your choice of milk.
Add other fruits like bananas, apple, pear or other berries.

Panna Cotta with Mixed Berries
A simple and fast breakfast to make if you are running late. It takes less then ten minutes to make. Cream chesse, bagel and strawberry are a perfect match.
Ingredients
4-5 large strawberries
cream chees
1 tsp. shredded coconut
Method
Spread cream cheese on slightly toasted bagel.
Place chopped strawberries on bagel and sprinkle shredded coconut.
Note
Feel free to put a tsp. of coco powder instead if shredded coconut.

Nothing beats a healthy breakfast on a Saturday after a long jog. Chickpeas cooked in tomatoes, coriander and Moroccan spices with poached egg served with almond bread.
Ingredients
2 tbsp. olive oil
1 capsicum
1 onion roughly chopped
1 1/2 tbsp. cumin
1 tsp. coriander
1 tsp. paprika
1 tsp. chilli flakes (optional)
2 crushed garlics
100g canned tomatoes
2 eggs
400g canned chick peas
Coriander leaves to garnish
Salt and pepper
Method
Heat olive oil on a pan. Add onions, cook until it’s soft.
Cook Capsicum for minutes. Add garlic and spices and cook for a minute or until fragrant.
Add tomatoes and cook for a few minutes. Add chickpeas and stir. Simmer for 5 minutes.
Make a well in the middle and add eggs. Cover with a lid for 7-10 minutes or to your liking.
Sprinkle coriander
Note
You can use fresh coriander instead of ground coriander.
You can use 1/2 a chilli or jalapeno instead of chilli flakes.
You can add more tomatoes.
You can add two extra eggs in the mixture.

Ingredients
I cup Milk
1/4 cup coconut flakes
1/2 cup fresh or frozen berries
2 tbsp. LSA
1 tbsp. chia seeds
1 tsp honey
Method
Place all ingredients in a blender and blend until all ingredients are combined

I love a hot bowl of porridge on a cold winters day. This porridge contains cooked oats combined banana, chia seeds. cocoa powder, nuts and a dash of honey.
Method
1/3 cup rolled oats
2 tbsp. chai seeds
1 tsp. cocoa powder
1/2 banana mashed or sliced
1 tbsp. honey
1tspn ground cinnamon
Pinch of nutmeg
1/2 cup milk
1/2 cup water
nuts (optional)
Method
Add oats in a saucepan with milk and water on a high heat and bring to boil. Reduce the heat and simmer for 5-10 minutes. (Check the grains are cooked and it is the right contingency).
Remove from the heat and place in a bowl. Add fruits, nuts, spices and honey,
Note
Feel free to increase the coco powder to 1 tbsp.
